Founded by husband-and-wife team Justin and Rachel Laufer, our truck is based in Woodland Park, Colorado, and proudly serves up handcrafted grilled cheese sandwiches throughout El Paso and Teller Counties. What began as Justin’s decade-long dream finally hit the road in May 2022, when we opened our window to the world with one simple goal: to take comfort food to new, adventurous heights.
Our truck—custom-built from the ground up in Cripple Creek by the talented Cody Larsen of Iron Shield Fabrication—is designed to look like a Jeep, capturing the spirit of Colorado’s off-road culture. That’s why every sandwich on our menu is named after an off-road trail. With over 30 rotating grilled cheese creations, from seasonal favorites to ever-evolving specials, there’s always something new to discover.
Whether you’re a die-hard cheese lover, a local trailblazer, or just in it for the corgis (yes, they’re part of the theme!), we’re here to bring the heat, the cheese, and the good vibes wherever we go.

Bonny isn’t just our mascot—she’s family. With her big personality, short legs, and endless charm, Bonny inspired the cheerful, adventurous spirit behind everything we do. From the playful corgi ears in our branding to the tail-wagging energy we bring to every event, she’s a reminder to keep things fun, friendly, and full of flavor.
In her honor, we named our classic three-cheese grilled cheese “The Bonny”—a melty, golden masterpiece that represents the comfort, joy, and lovable character she brought into our lives.
Customers often ask us, “Do you really have corgis?” The answer is—yes! Bonny is our current four-legged mascot, but she’s actually our fourth corgi (so yes, we’re fully aware we have a bit of a corgi addiction). While Bonny may not be behind the grill (we’ve asked—she’s more into cheese than cooking), her legacy rides with us on every trail.
